Homemade Mayonnaise


MAYONNAISE
Ingredients
240 gr. Sunflower oil
The juice of 1.5 lemon
2 large potatoes boiled whole (300- 350 g.)
1 tablespoon powder of mustard 15 g approx.
1 very fresh egg
Salt to taste

How to do it
Put water in a small pot. Place the pot over moderate heat.
Peel the potatoes, wash and place them whole into the water. Let them boil until soft.
Put 120 g Sunflower oil into the blender
With fork wring the potatoes and mash them.
Put half of the mashed potatoes into the blender.
Hit them for 2-3 minutes.
Add the remaining 120 gr. sunflower and potatoes into the blender.
Hit them all together for a few minutes.
Add the lemon juice, the mustard powder and salt and hit for a few more minutes.
Add one whole egg and beat, until you get a mayonnaise-like paste.

Cake with beets


CAKE WITH BEETS
This cake is delicious and has a very special taste. 

Ingredients
250 gr. boiled beets
200 gr. sugar
200 gr. olive oil
4 eggs grated large
1 teaspoon baking-powder
200g self raising flour
80 grams of cocoa
1 tablespoon grated clove
3 TB liqueurs with bergamot or brandy or other liqueur

How to make the cake
Peel the beets and cut them into small pieces.
Put them in food processor. Add sugar and beat until they become juice.
Empty the food processor into the bowl of the mixer.
Start the mixer on medium speed and add the eggs one by one.
Let the mixture to be beaten for a few minutes.
Stop beating.
Remove the bowl of the mixer from its base.
Add bergamot liqueur and grated clove in the bowl.
Stir gently with a wire.
Add cocoa in the bowl and mix gently with a wire.
Mix the flour with baking powder.
Sift the flour over the bowl.
Mix well with a spatula.
Butter and flour a pan 26 cm in diameter.
Pour the cake in it.
Place the pan in the oven and bake for 45-50 minutes at 170 degrees Celsius. 
To see if the cake is cooked, drive a knife in it.
When the knife comes out clean, the cake is baked.

Tzatziki


SATZIKI OR TZATZIKI
Ingredients
500 gr. yoghurt
500 gr. cucumber
50g. olive oil
4 large cloves of garlic
 Salt to taste

How to do it Put in a bowl the yoghurt.
Add salt to taste.
poor the olive oil into the bowl. 
Mix the yoghurt with the olive oil.
Peel the garlic and cut it into very small pieces. Put them into the yoghurt and mix.
Peel the cucumber and cut into cubes, smaller than the dice.
Put chopped cucumbers into the yoghurt and mix well.

Beet salad



BEET SALAD
Ingredients
1.5kg fresh beets,
5 cloves garlic peeled
80g. olive oil
 Salt to taste
3 table spoons balsamic vinegar

Cut the leaves from the beets. Use only the bulbs.
Clean each bulb from its roots. Wash the bulbs well. 
Put the bulbs in a pot and cover then with water.
Put the pot over high heat and boil for about an hour.
To understand if the beets are cooked, drive a fork in them.
When the bulbs are cooked fork easily pinned inside them.
Otherwise they are uncooked and need more cooking.
When the bulbs are ready, remove them from the pan and let them cool.
Peel the bulbs. Cut them into thin slices in a deep serving platter.
Add salt, olive oil, vinegar, and garlic cloves chopped.
Stir well. Try the cooked beets to see if food requires more salt or vinegar.
