BURGERS WITH RICE IN THE OVEN
Ingredients
for the mince meat
1 kg ground
beef or 700 g. beef and 300 g. minced pork
3 large
onions
4 cloves
garlic
Salt,
pepper, oregano, very little savory
1/2 tsp ground
cumin
40 g.
breadcrumbs
40 g. of
olive oil
1 medium
potato,
1 medium
ripe tomato
Instructions
Peel the onions and garlic.
Put them in the blender and chop them.
Put some salt on the minced meat and knead well with your hands.
Put the chopped onions and garlic in the mince.
Knead the onions and minced meat to mix well.
Put oil in the minced and knead again.
Add the ground pepper, oregano, savory, and cumin and knead.
Put the potato in the blender and mash it.
Put the mashed potato in the mince and knead again.
Put the tomato in the blender and puree it. Then knead again.
Add the breadcrumbs to mince.
Knead well all ingredients together.
Put the meat in the refrigerator for at least two hours, in order to mingle
the flavors.
You can prepare the meat for meatballs overnight.
If you don’t want to do that, leave the mince in the fridge for two hours,
in order to mingle the flavors.
Pilaf
Ingredients
2 cups rice for
pilaf
60 g. of
olive oil
6 cups hot
beef broth or vegetable stock
Salt to
taste
Instructions
Put oil in a medium pot and place it over medium heat.
Put the rice into a colander and rinse it under the tap.
Leave it to drain a bit and pour it into the pot.
Stir immediately so it won’t stick.
Keep stirring the rice until it gets a transparent color.
Add the hot broth of meat or the stock of the vegetables.
Add salt and stir again.
Let the rice cook until it absorbs almost all
the broth.
Assembling the food
Use a circular pan 30 cm in diameter.
Grease the pan slightly.
Spread the rice evenly throughout the pan.
Put in a bowl 50 g. of olive oil.
Put on your palms minced meat as much as a small orange.
Twist the minced meat into your hands and give it the shape of a small ball
Press the meatball between your palms and give it the shape of a burger.
Dip the burger in the oil to get smeared with it on both sides.
Place the greased patty over the pilaf.
Make a second burger and dip it in the oil and then place it next to the previous
one.
Continue in this way until you cover the top of the pan with burgers.
Place the pan on the first rack from the top (just under the grill).
Bake at 180 C degrees for 10-15 minutes.
They do not need cooking for very long.
Once the burgers are browned on top they are ready.
Remove the pan from the oven so the food will not dry.
